Artichoke Quinoa Dish (cold salad)

Ingredients:

  • 3 cups cooked quinoa
  • 14 oz can of artichokes (drained/chopped)
  • 15 oz can of white beans (drained/rinsed)
  • 1/3 cup fresh mint chopped
  • 1/3 cup fresh parsley chopped
  • 3Tbsp fresh lemon juice
  • 1/4 cup minced red onion
  • 2 Tbs olive oil
  • Salt & pepper to taste

Directions:

  1. Drain and chop artichokes
  2. Drain and rinse beans
  3. Chop fresh herbs
  4. Mix together and enjoy!

Tip: Cook quinoa the night before so that it has time to cool.
